Our Grow-it-Yourself Hantana Phoenix Oyster Mushroom-growing kit provides a rich educational and culinary experience, taking you from raw materials to awe-inspiring harvest in about three weeks. It lets you clearly see how these amazing organisms - Phoenix Oyster Mushrooms (Pleurotus pulmonarius) - live and grow.
The kit includes dry substrate ingredients, live spawn in a growing bag, and quick-start instructions. You combine the dry material with the spawn, some coffee grounds, hydrogen peroxide (available at grocery stores and pharmacies), and water, all in the spawn bag. Then you seal the bag and watch; you will see growth begin in as little as one day!
Over the next 10 days or so the mushroom's fibers - the mycelium - will continue to colonize the substrate. Soon it will start to form solid masses where mushrooms will form. Once these appear, it's time to make an opening in the bag so that tiny mushroom pinheads can form and expand out of the bag.
Once exposed to fresh air, light, and moisture, pinheads usually form within a matter of days. expanding into the open air. Healthy Phoenix oyster mushroom pinheads produce a pretty profusion of protective pink fluid during this crucial period.
As pinheads grow, they differentiate more clearly into caps and stems, swelling into increasingly impressive fruiting bodies. It takes from a few days to a week or more to go from pinhead to full maturity, depending on the temperature.
On our web site we provide detailed instructions that guide you through the entire incubation, pinning, and fruiting process with ease!
The Phoenix oyster is grown and enjoyed widely all over the world. It has a complex, earthy flavor and delicate, slightly chewy texture that suit almost any style of cooking. The entire fruiting body, cap and stem, is good to eat. The flesh is more delicate and fragrant than the closely-related Pearl or Blue oyster mushrooms. That makes the Phoenix oyster less popular with commercial growers, so you don't see them as often in grocery stores. That makes growing, harvesting, and cooking them at home at their peak a really special experience.
The amount of edible mushroom a kit can produce depends, in part, on how massive it is. Our kit makes a full, industry-standard 6 pound substrate block, which can produce as much as 1.5 pounds over several flushes. A kit weighing half as much can only produce about half as much.
Starting the process from scratch and providing the heavy stuff yourself - the water and coffee grounds - saves over three pounds of shipping weight. Over thousands of units shipped, that saves a lot of fuel. We think about that kind of thing a lot, because we strive to produce only environmentally-sustainable products that enhance life and learning. Join us for a great mushroom-growing adventure!
Why Do We Call It Hantana Phoenix?
The Phoenix Oyster grows and is cultivated all over the world. Our strain originated on our farm, which we call Hantana. We discovered this oyster mushroom in the woods here and domesticated it. Hantana Phoenix has been a hit ever since we introduced it through local farmers' markets in early 2010.
What’s New About the Kit?
The latest version of our flagship mushroom-growing kit is now less expensive and better for the environment. We introduced a new mixing method that requires one less polystyrene bag, and the packaging has been reduced to a simple kraft paper bag. It includes a single sheet of easy quick-start instructions instead of the detailed booklet, and the rest of the information is on our web site. These changes reduce costs, materials, shipping weight, and make your mushroom growing experience as fun and earth-friendly as possible. The best value in mushroom kits just got better!

This was a gift from my mother-in-law. I hunt for wild mushrooms when I can, so she knew I loved mushrooms. However, when I was a bit nervous at first because I have never grown mushrooms before. This is my first kit. The instructions that were provided with it seemed overwhelming at first because they are a few pages long. But after I read it over, I dove right into it and it made more sense as I went.
The kit came with pretty much everything I needed to start except a couple of household items like hydrogen peroxide and tape. Once the kit was prepped, I put it in my closet and just watched!
After a couple of weeks, I just harvested my first fruit and have prepped the kit to fruit again (hopefully).
This is a great one for someone who has never done it before. Super easy and fun to do.
